Charlotte's Peanut Butter Cookies with Chocolate Kisses


The holiday season is not complete without a heavy dose of peanut butter cookies with chocolate kisses. This recipe has been in Elliott's family for decades but it's his sister, Charlotte, who has been faithfully carrying on the tradition in recent years. I think we beg her to make these little treats anytime she's home, whether it's Christmas or the middle of summer. They're the perfect blend of salty and sweet and just the right size for a quick bite...or two...or three. 
Ingredients: 1/2 cup butter 1/2 cup brown sugar 1/2 cup sugar 1 egg 1 cup Adam's peanut butter 1/2 tsp. baking soda 1/2 tsp. vanilla 1/2 tsp. salt 1 1/2 cups flour Beat together the butter and two sugars until creamy. Beat in the next 5 ingredients. Sift in the flour and mix until incorporated.

Next is my favorite part: the rolling of the balls. Take a small amount of the dough in your hands and roll into a jawbreaker size ball. Toss the ball into a bowl of sugar and coat evenly on all sides. Bake the balls in a 375˚ oven for 6 minutes and remove from the oven. Press the chocolate kisses into the center of each ball and return to the oven for another 3 minutes.
